I normally don’t have the audacity to call my own culinary experiment the best ever. But this really simple concoction took me (and the boy) by surprise. Much to my delight (and his chagrin) I realised I do have a cooking bone somewhere deep inside. Now, for the prize of Domestic Goddess 😉
You will need:- One medium onion, 2 cloves of garlic, a tin of peeled tomatoes (400gm), half cup of water, 100 ml of vegetable stock plus, salt, pepper, chili flakes (optional), dry basil, cheese slivering (optional), croutons, half tablespoon of olive oil.
Roughly chop the onion and garlic. Heat oil in a saucepan. Roast the onions and garlic till they are golden brown.
Add the tomatoes, water and vegetable stock. Let it cook for about 5-10 minutes. Take it out from heat and let it cool.
Blend the mixture in a blender. Make sure the consistency isn’t too thin. Pour the mixture in a saucepan and again cook it for 10 minutes.
Add salt to taste, a generous dash of pepper, some chili flakes and some dry basil. Garnish it with some store bought croutons and a tiny bit of grated cheddar cheese. Slurp!
